SCHEZWAN MAKKA CHOLAM /JOWAR KUZHI PANIYARAM

Kuzhi Paniyaram is basically a popular South Indian breakfast dish. It is generally made using the left over Idly Dosa batter in a cast iron paniyaram pan. . I never prepare paniyarams using left over idly batter ,  I always prepare  the batter for Paniyaram from scratch and to make it more healthy I hvave added makka cholam flour/ jowar flour along with rice and urad dal.  I have added schezwan sauce to the batter to make this snack a favourite one for kids too. A very healthy and delicious snacks loved by one and all.








INGREDIENTS
Raw rice                                                - 1/2 cup
par boiled rice                                      - 1/2 cup
Urad dal                                             - 1/4 cup
Makka cholam flour / jowar flour                -1 cup
Salt                                                 - to taste.
oil                                                         - for deep frying.

INGREDIENTS FOR SCHEZWAN PUREE

Kashmiri red chillies - 5 nos
Small onions              - 4 nos
Garlic                          -5 cloves
Ginger                         - ¼ inch piece            
Sugar                          - 1 tsp
Soya sauce                 - ¼ tsp
Pepper powder           - ¼ tsp
Vinegar                       - 1 tsp

Grind together the above ingredients to a smooth paste adding required water..








METHOD

soak rice and urad dal two hours .
soak urad dal and rice together for two hours .
Grind, rice, and urad dal together .
Add jowar flour schezwan puree and salt  and blend it well.
 keep aside the batter for two hours .
After two hours , preapare paniyarams in a paniyaram pan with ghee or oil .
cook the paniyarams in medium flame till the paniyarams become golden brown .
yummy schezwan makka cholam/jowar kuzhi paniyarms are ready to serve.
